Recipe: Keto Pralines

Ingredients:

  • 1 cup chopped pecans
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1/4 cup granulated erythritol or your preferred low-carb sweetener
  • 1/2 teaspoon pure vanilla extract
  • A pinch of salt

Instructions:

1. Prepare a Baking Sheet:

  • Line a baking sheet with parchment paper or a silicone baking mat.
2. Toast the Pecans:
  • In a dry skillet over medium heat, toast the chopped pecans until they become fragrant and lightly browned. This should take about 2-3 minutes. Stir frequently to prevent burning. Remove the pecans from the skillet and set them aside.
3. Prepare the Praline Mixture:
  • In the same skillet, melt the unsalted butter over medium heat. Add the granulated erythritol and cook, stirring constantly, until it melts and turns golden brown. This will take about 2-3 minutes.
4. Add Cream and Vanilla:
  • Slowly pour in the heavy cream while continuing to stir. Be cautious, as it may bubble up. Cook the mixture for another 2-3 minutes, stirring constantly, until it thickens slightly.
  • Remove the skillet from heat and stir in the pure vanilla extract and a pinch of salt.
5. Combine with Pecans:
  • Add the toasted pecans to the praline mixture and stir until the pecans are evenly coated.
6. Form Pralines:
  • Quickly drop spoonfuls of the mixture onto the prepared baking sheet. You can make the pralines as large or as small as you prefer. Leave some space between each praline as they will set and firm up.
7. Let Pralines Cool:
  • Allow the pralines to cool at room temperature for about 30 minutes, or until they have hardened.
